Regarding the failing builds:

• Leap 15.3 and 15.4: there seems to be a mix of two OpenMPI package versions, openmpi2 and openmpi3, and I was not able to figure out how to resolve the correct dependency
• armv7l: looks similar to the armhf OpenMPI bug that we experienced on Fedora and Ubuntu; the ESPResSo team decided to stop officially supporting 32bits architectures

Then I would ask you to add ExcludeArch: tags.

Alright, I just added the instruction to exclude s390x and armv7l, but armv7l is still being built. Do I need to specify a different name?

I also found out which version of OpenMPI to pull and now the Leap builds and passes the testsuite without any issue.

I guess you need %arm32, not certain about it. Take a look at /usr/lib/rpm/macros.
